Either Long Gui or Vercingetorix.Probably depends on if that last bit of extra hp for Long Gui does you in the long run.

 

That was gonna be my answer. Vercingetorix because he's the Superboss of the game, like the WEAPONS of FF VII, Omega Weapon of FF VIII, Nemesis (Penance in International) in FF X, etc.

Although you technically don't encounter Kujata (As I recall, that Fal'Cie is only shown in flashbacks), you got the answer correct. No need for the parade ones. I wouldn't have ever thought to remember them.
