Okay here was my battle strategy for both Kingdom Hearts and Kingdom Hearts II (Since I noticed that a lot of people have mentioned that one too ^^)
In Kingdom Hearts I did the old hit the enemy as much as possible, and once my HP started to get low I would use cure on myself (I was too cheap to want to watse my potions in the game even if I had 99 in stock XD)... But also, if I ever came into a battle where the enemy had a lot of life and I knew it would take some time I would summon Tinkerbell because she heals you during battle and unlike most summons she doesn't follow that MP or I can't remember what it's called but you know the gauge where when it ran out the summon left, yah she doesn't have one... She stays into battle until you die and she brings you back to life... So I think she's ideal for people who never really leveled themselves up durong the game because you can die once and she'll bring you back and you can keep going ;]
In Kingdom Hearts II I had basically the same principal, just keep hitting the foe with my keyblade and use cure on myself once my HP went low (Cure is actually the only magic I used during fights)... But if I was against a strong enough foe I would summon Stitch since there was no Tinkerbell.... I loved the move when he was playing the ukalele and you would hit random buttons and that would hurt the boss you were up against x3

when you say "was no Tinkerbell" did you forget to get the charm in Port Royal that's hidden in the corner in that one room you first appear in in the shipreck place? (if you've finished up to that point) or did you just not have Peter Pan and Tinkerbell at the time?

Tinkerbell was in that game O.O... I thought there was just Peter Pan v.v I never used him because Peter just freaks me out, it could be because he runs around in green spandexy pants; you can't trust someone after that XD.... Why if you summoned him would Tinkerbell come too?? No!! If so I wish I knew that sooner because I beat Kingdom Hearts II thinking there was no Tinkerbell to help me out v.v... I guess there's always next time when I decide to play the game again...

err...actually, Tink doesnt come seperatly. She heals a small amount of Hp every now and then and if you die, she brings you back to life once. but that's only if you summon the green-tights-wearing-fairy-boy Peter.

Seriously O.O... I don't see how he breaths in those pants of his I mean they're stuck on him >.>... But I guess if it's the only way to get to Tinkerbell I'll have to take one for the team v.v.... I don't know having Tink on summon while I'm in battles always comforts me because I know I can die once and still be alright... I think she's the best summon out of them all type of thing, because Donald gets lazy sometimes and won't heal me <.<... He can be such a cruel duck... Which is why I started using her... I remember in Kingdom Hearts I summoned Bambi once to see what he does and he only gives you gifts o_O What kind of summon was that, I was hoping he would go all crazy on everyone... I think summons though are really helpful when it's your first time through because you're new to everything and they might be able to help you fight and beat the boss more easily and quickly :3

I always aim for the most dangerous enemies first, because Sora generally does more damage than Goofy and Donald. I let Goofy and Donald take care of the less dangerous ones, and when they're finished with those, they come to help me. I always jump around and glide a lot and dodge attacks but sometimes I choose to take the damage and deal a lot of attacks, then I get out of the way and heal myself. I never let my health bar get to the red, flashing state and when the health bar is around about level with Sora's biggest spike of his hair on the back of his head, I always heal. If the enemy deals a particularly nasty blow, Donald will usually heal me instantly unless he has no items or MP. I also use Counter a lot, and when I need it, Ars Arcanum, but as a general rule I don't use magic unless it's to heal myself. I never use summons. I don't equip Dodge Roll or Guard since I don't think to use them. I always get by just fine with taking hits if I'm caught out and then healing, and since I have Second Chance and MP Rage equipped so that when I do get hit, I always have 1 HP remaining, and enough magic to heal myself.

lol, on the harder bosses I would target them and have donald and goofy do the work for some time then I would eventually step in.

KH1: I basically just figure out the pattern the enemy follows (like when a boss says a certain something, I know which attack they're going to use and how to avoid it) and I dodge roll and attack a lot. I use potions and cure equally. I rarely used magic.
KH2: I used guard, figured out the pattern and hacked away! Basically the same as KH1, but using guard. Or I just got up on to high ground or something and watched Donald and Goofy die. You two just got pwned, lol.

This was my strategy for CerberusKH1(is he even in KH2..?).Someone else asked this on GFAQs so i replied with this:

The way i beat Cerberus was level until i got scan and when he shoots the fireballs, keep dodge rolling and try to stay behind him while he's doing the fireball thing.after he does that,He'll keep turning looking for you so just stand still until you're in front of him and he's about to attack.Once he does,DODGE! Stay either on the left or the right of his heads.follow this pattern "he attacks, you dodge he pauses for a few seconds, you attack his left/right head with a 2/3 hit combo, dodge" and the pattern will repeat.

when he stands on his hind legs, run to the back of him and jump over the wave and you'll see that his left leg allow you to get on his back for right now.Jump onto the left leg,and get onto his back. He'll start shooting fireballs again,Donald and Goofy should be dead already so this'll be a little harder until they revive.Oh and when you're on his back, DO NOT TRY TO ATTACK HIM!It'll automatically hurt you(it did for me anyways..)

once he's done with the fireballs, jump off him and get in front of him again.Dodge the attack to either the left or right of him again and repeat the pattern in the first paragraph.Once you get his blood down to when it's about to be the green bar, he'll do a new move.He does it right after the "get on hind legs and do a shockwave" thing. When he does the shockwave, get on his back again and stay on there until he finishes his attacks trying to get you.If you have MP still then use thunder while on his back.Just repeat the pattern again until you defeat him.

NOTE: DURING HIS NEW ATTACK,HE'LL USE A DARK WAVE THING FROM HIS MOUTH.HE'LL SHOOT FIREBALLS AGAIN THEN HE'LL DO A DARK WAVE THING AGAIN.BE SURE TO STAY ON HIS BACK DURING ALL THREE ATTACKS.

NOTE:YOU SHOULD BRING AS MANY HEALING ITEMS POSSIBLE.

Donald and Goofy were pretty useless when i fought this guy so i don't think you have to worry about healing them with items.
